
CHAMPAGNE LA BORDERIE BAR-SUR-SEINE
Odile and Jean Louis Normand, brother and sister, took the reins of the family farm from their family and ran the champagne estate before passing it on to the next generation in 2013. Brother and sister Marie and Simon Normand now guide the farming family in to the new generation of winemaking. They have long left behind chemical treatments and only use organic materials when working the vines.
Marie and Simon have embraced the push for biodiversity in the vineyard. They see this as the way to produce the best and healthiest grapes as well as providing habitat and nutrients to support vine auxiliaries such as birds and insects. They have planted grasses in between the vines, 400m of hedges and even a small orchard amongst the vines. Top all of this off with the addition of bird and bat boxes and you have a complete ecosystem to support the best vineyard health possible.
The average age of the vines is 30 years old and they are planted to Pinot Noir, Meunier, chardonnay and Pinot Blanc. The domaine farms 11ha of vines but only uses 1.5ha of those vines to create the champagnes of La Borderie. Their annual production is only 10,000 bottles. The rest of these grapes are sold to the co-op or big houses. The top 10% of the harvest each year is used to create their wines.
All efforts are made during harvest to translate the vineyard in to the bottle. The aromatic integrity of the picked fruit is paramount and they identify over 20 plots each year to vinify and age separately. This allows the qualitys of the terroir and the story of each year to be displayed.
The champagnes are true expressions of the place from which they come. They speak of the Aube region, they speak of terroir and the people who make them. They are precise in their execution but generous on their delivery.
